Basil & Parsley Vegan Pesto

Makes ~250 ml
This vibrant basil and parsley pesto is rich in antioxidants, essential vitamins, and healthy fats, with natural antimicrobial properties to help support wellbeing during seasonal changes. Made with fresh herbs, olive oil, garlic and nutrient-dense seeds, it’s a simple way to add both flavour and function to everyday meals. Use it as a dip, toss it through salads, or spoon it over vegetables, grains, or pasta as a nourishing sauce.

90 g fresh parsley 12 g fresh basil 17 g baby spinach 17 g omega seed mix 19 g nutritional yeast

68 ml extra virgin olive oil |
Method
- Soak parsley, basil, spinach, and lemon in water with 2 tsp sodium bicarbonate per litre for 15 minutes to remove any pesticide traces. Rinse well.
- Dry thoroughly using a salad spinner.
- Zest and juice the lemon.
- Add all ingredients to a blender and blitz until smooth, scraping down the sides as needed.
- Adjust consistency with a little extra olive oil or lemon juice if required.
Storage
Store in an airtight jar in the fridge for 4–5 days. For best colour, smooth the surface and cover with a thin layer of olive oil.
Raspberry Coconut Protein Energy Balls
Makes 12 balls (15 g each)
These berry rose energy balls are a delicious sweet treat designed to curb afternoon hunger while nourishing the body. Rich in healthy fats, fibre, and vitamin E, they offer sustained energy without the crash. Perfect as a mid-afternoon snack, a post-lunch bite, or a mindful treat with a cup of tea.

Decoration
- 5 g raspberry powder
- 12 g desiccated coconut
Method

Add all base ingredients to a food processor and blend until a sticky dough forms.
- Divide into 12 portions (15 g each) and roll into balls.
- Place on parchment paper and refrigerate for 15 minutes until set.
- Mix raspberry powder and coconut together, then roll the chilled balls to coat evenly.
- Store chilled until serving.
Storage
Keep refrigerated for up to 5 days or freeze for up to 2 months.
Parsnip & White Bean Soup

Serves 4
This parsnip and white bean soup is a delicious, heart-warming seasonal recipe. We recommend using organic produce wherever possible to support soil health and maximise nutrient density. Gently spiced and naturally creamy, it’s an ideal dish for cooler days when the body craves warmth, grounding flavours, and plant-based nourishment.

650 ml vegan organic vegetable stock |
1 tbsp coriander seeds, lightly crushed 1 tbsp cumin seeds 1 tbsp fresh ginger, grated ½ tsp ground turmeric 2 cardamom pods, lightly crushed Olive oil, for cooking Sea salt, to taste

Method:

Heat olive oil in a large pot over medium heat. Add onion and cook for 5–6 minutes until soft and translucent.
- Add coriander seeds, cumin seeds, cardamom pods, ginger, and turmeric. Cook for 1–2 minutes until fragrant.
- Add parsnips and pear, stirring well to coat in the spices.
- Add vegetable stock and coconut milk. Bring to a boil, then reduce to a simmer and cook for 20 minutes, or until parsnips are very tender.
- Add cannellini beans and lemon juice. Remove cardamom pods and blend until smooth.
- Season with salt and adjust lemon juice to taste.
Storage
Store in the fridge for 3–4 days or freeze for up to 2 months.
Goji Berry & Hemp Protein Bircher

Serves 4 (65 g per serving)
This Goji Berry & Hemp Bircher is a nourishing, make-ahead breakfast designed to support steady energy and balanced blood sugar. Rich in fibre, plant protein, and essential fats, it’s an easy, grounding way to start the day. Goji berries and freeze-dried berries offer natural sweetness and antioxidants, while hemp seeds and chia provide omega fats and satiety. Perfect for busy mornings, simply soak overnight and top as you like.

Method (Per Serving)

Combine all ingredients
- Add 65 g of the bircher mix to a jar or bowl.
- Pour over 150 ml milk of your choice.
- Stir, cover, and refrigerate overnight.
- In the morning, top with yoghurt, fresh fruit, nuts, seeds, or any toppings of your choice.
Storage
Store the dry bircher mix in an airtight container in a cool, dry place for up to 2–3 weeks.
